Thing #14: Valentines

Posted a day late so as not to ruin the surprise… I made a valentine for my valentine, including a card and a heart shaped cherry cake. Cherries was actually the theme of the day as maraschino cherries are one of his favorites.

Blueberries on sale plus lemons in the back yard equals this sourcream blueberry poundcake.   I got the recipe straight outta the Williams-Sonoma Desserts cookbook that good aunt Sara gifted me one Christmas.  One of the stickiest cake doughs I’ve ever encountered, it actually climbed up the electric mixer and made a huge mess much to my shock and awe.  I might add a little more salt to bring out the flavors in the future.  I have determined that this cake is good all the time- but It’s really good in the morning warmed up with some cawfee..

Day 1: Lemon polenta cake

I’m going to a friend’s party tonight, and so decided to make a cake, especially as baking is not my strong point and I’d like to work on my domestic goddess skills.  ;)  I’ve been meaning to experiment with the recipe for Lemon Polenta Cake (p. 129) in the Readers’ Digest book Food For Your Body (2001).  I have an intolerance to sugar and so I replaced it with granulated xylitol, which doesn’t cause me problems.

I would have liked to have cut a slice to show the texture, but I guess I shouldn’t do that before the party tonight!  And, of course, I have NO idea what it tastes like yet.  I’m hoping not too bad; I managed to put too much polenta and no lemon juice into the batter.  That’ll teach me for skim-reading the recipe!  Still, it doesn’t look too bad…
