vegan blueberry buckwheat pancakes
Today I made vegan blueberry buckwheat pancakes that were enjoyed by my vegan friend who was visiting me from out of the country. Sorry, I didn’t have time to document, so no photo. Instead of milk I used Almond Breeze and replaced butter with olive oil. The recipe also included a table spoon of apple cider vinegar. I think there may be some kitchen science to the reason you add the cider vinegar, does anyone know anything about this?

sounds yummy… do you have a recipe? how did they taste or did you not try them?
they weren’t bad. the blueberries didn’t taste like blueberries so that was a little disappointing, but otherwise fluffy and tasty. Recipe-wise, it’s a little tricky b/c I mixed together a few recipes. But what I remember is 1.5 c. buckwheat pancake mix, 1 cup Almond Breeze, 2 tbsp olive oil, 1 tbsp apple cider vinegar and a heap of frozen blueberries. mix all together and let it sit for 5 min. before cooking
