Thing 8. Bread-and-Butter Pickles

Pickles aren’t the most photogenic subject. I took about a dozen shots in my kitchen and tossed them. Then I took my pickles out to the balcony and tried them at different angles, backgrounds, etc.
Obsessive? Moi? Isn’t that why I’m participating in Thing-a-Day?
I ended up with this shot taken on macro setting through the decoration of the pressed glass jar. I love them and eat them with just about anything, except ice cream.
And just to forestall the inevitable requests….
Great and Easy Bread-and-Butter Pickles
Makes about a quart, which is good for small families and singles
8 small pickling cucumbers, unpeeled, thickly sliced
1 medium onion, halved and thinly sliced
1 cup cider vinegar
3/4 cup sugar
4 tsp salt
1 tbs pickling spices (if you don’t have pickling spices, you can substitute a couple tsp of mustard seeds, some crushed bay leaves, whole coriander seed, caraway)
1/2 tsp turmeric
1/2 tsp cayenne flakes
Combine all ingredients in a stainless or enameled pot and bring to a boil. It will seem like you have way too much cucumber and too little liquid but the cucumbers will cook down in volume. Simmer 1 minute, stirring frequently. You don’t want to totally cook the cucumbers, just to take the bright green colour off.
Pour into a heatproof bowl and cool, stirring occasionally. Pack into a jar and chill overnight. They’ll keep up to 4 weeks in the fridge.
